Spanish omelette

Ingredients:


- 6 or 7 medium potatoes, peeled
- 1 whole yellow onion                          
- 5 or 6 large eggs              
- 2 or 3 cups of olive oil for pan frying

( Salt to taste )

       


Method:
1 - Peel and wash the potatoes.

2 - Cut the potatoes into slices and add salt.

3 - Cut the onion into very little slices.

4 - Add olive oil to a pan placed over a low-medium heat. Once hot, add the onions and fry for 5 
minutes- do not let them colour.

5 - Add the potatoes to the pan, reduce the heat and continue to cook for 2-3 minutes.

6 - Then, pour the egg mixture over the potatoes and onions in the pan.

7 - Introduce the pan in an oven. Set until the eggs are cooked and golden on top or do 20-25 minutes.

8 - Remove from the oven and leave to cool for 5 minutes before serving.

9 - For the decoration, add red pepper, some cheese and some parsley.
